Our organic freeze-dried coconut cubes are imported in small batches from a organic certified exporter from the Wayanad district in the Kerala state, India. Organic freeze dried coconut cubes contain the same nutrition as fresh coconut only much lighter.

Freeze-drying, carried out on site, preserves the flavor and properties of the fruit ripened in the sun and picked when just perfectly ripe. Freeze-dried fruit are commonly used for snacks, emergency food supplies, and even space missions.
What is the difference between dried (dehydrated) and freeze-dried fruit?
- First of all both are a great way to preserve fresh fruit for snacking of baking later.
- Dehydrate fruit placed in a dehydrator where warm air is blown to remove between 70-90% of the moisture. The fruit will look darker and will loose volume. Depending on the level of humidity remaining it will be chewy to crispy.
- Freeze drying, also known as lyophilization, involves freezing the food and then reducing the surrounding pressure to allow the frozen water in the food to sublimate directly from the solid phase to the gas phase. This process removes almost all the moisture from the food, making it lightweight and very shelf-stable.
- This allows the fruit to retain incredible nutrient density. The result is a crispy treat with almost the same size as the original, just very very light. Freeze-dried fruit can be rehydrated and will look and taste much like the fresh version.
- Freeze-dried fruit is much more expensive but the quality is incomparable.
How Dry are they?
- Dried fruits are dried to various degrees to match end use. These are best for snacking.
- They have less than 3% humidity making them still very light and crispy.

BioWin was founded in 2013, their mission is to renovate the region's agricultural sector by promoting organic farming and guaranteeing fair incomes for producers. Today, some 16,000 farmers benefit from their training and advice in organic farming. This training enables farmers, for example, to produce their own natural fertilizers. Biowin also supervises the harvests, guaranteeing a purchase price between 25% and 50% above the market price. The crops are then transported to the Bioland processing plant, where they are treated to the highest quality standards.
- Located in the south-west Indian state of Kerala. More specifically, in the Wayanad district, a mountainous region with fertile soil watered by the monsoon, where not only famous spices grow, but also fruit, coffee, tea, rubber trees and much more.
- Unfortunately, intensive farming methods and the excessive use of chemical pesticides since the '90s have caused serious environmental damage and led to the ruin of many farming families. Driven by agro-industrial traders, farmers went into debt to buy pesticides, without making any profit from their crops. In the early 2000s, the Wayanad region was infamous for having the highest farmer suicide rate in India!
- Many of the producers are women who have taken over the farm following the suicide of their husbands, as well as people from ethnic minorities. In addition to the above-market price received by these producers, Fairtrade premiums enable a number of achievements: health programs, house building, distribution of tree seedlings, and the production and distribution of organic fertilizer.
