Our organic Chinese Five Spice mix "wǔxiāng fěn" is a spice mixture of five spices used in almost all branches of Chinese cuisine. The five flavors of the spices (sweet, bitter, sour, salty, and savory) refer to the five traditional Chinese elements (fire, water, wood, earth and metal).
Our mix includes the traditional anise, fennel, pepper, cinnamon and cloves. This balance is the entire point of this fragrant reddish-brown spice powder.
Like its name implies, its flavor touches on every spectrum of taste. It's sweet but also earthy, spicy but also cooling, and strongly aromatic. The licorice flavor of the star anise comes out strong, supported by the fennel seed, which also has a warmth and sweetness to it. However, the cinnamon exhibits both traits more dominantly. It also has a peppery kick to it.
Five spice may be used with fatty meats such as pork, duck or goose. It is used as a spice rub for chicken, duck, pork and seafood, in red cooking recipes, or added to the breading for fried foods. Five spice is used in recipes for Cantonese roasted duck, as well as beef stew. The five-spice powder mixture has followed the Chinese diaspora and has been incorporated into other national cuisines throughout Asia.
