"May Contain" statement NEW FOR 2025 (Progressive rollout):

  • In 2025 we will be progressively updating our labels and product pictures with our new label that now include a "May Contain" statement.
  • The Canadian Food Inspection Agency (CFIA) dictates that "Cross-contamination statements may be declared by food manufacturers and importers".
  • That said, we hold ourselves to much higher standards than the CFIA and Health Canada rules oblige. Most companies do not and you will only rarely see "May Contain" statements.
  • If there is a remote chance that there might be cross-contamination of a priority allergen, we will declare it on the product label in the form of a "May Contain" statement.
  • A "May Contain" statement does not mean that the allergen is present in the product, it is simple a precautionary measure we take to stay the most transparent possible.
  • If an allergen is present in the product, it will be clearly declared in the ingredients.
  • For example our Quebec made flours come from a mill that makes both oat and wheat flours. Since both allergens are present in the mill we automatically declare the possibility of cross-contamination even if all precautionary measures are taken.
  • Only priority allergens are declared in the "May Contain" statement, which are:
    • Cereals & Grains: Triticale, Barley, Oats, Rye, Wheat.
    • Tree Nuts: Almonds, Brazil Nuts, Cashews, Hazelnuts, Macadamia Nuts, Pecans, Pine Nuts, Pistachios, Walnuts.

    • Soy
    • Mustard
    • Fish

Our organic corn semolina also called cornmeal is made by "La Milanaise" in Quebec from organic whole grain corn. This gluten-free semolina is a great alternative to traditional durum wheat semolina.

This organic corn semolina is not maze, that is to say that it has not been treated with silt, it is not nixtamalized flour.

Cornmeal offers good amount of folic acid which is must for efficient use of protein and prevent the chances of birth defects. A serving size of cornmeal provides 10 percent of daily recommended intake. It also helps to get 8 percent of thiamine which is required for influencing nerves health. One serving of cornmeal helps to meet 4 percent of recommended value of riboflavin, iron and niacin. Iron supports production of red blood cells and niacin is beneficial for cardiovascular system.

Cornmeal prevents cellular damage caused by free radicals. It also lowers the chances of macular degeneration, cancer and heart diseases. Research have shown that cornmeal has high content of antioxidants such as carotenoids which prevents the chances of various diseases such as heart disease and cancer.

 

What is semolina?

  • Semolina comes from the latin words "simila", meaning "flour" and the Italian word "semola", means bran. Traditionally the word refers to durum wheat semolina as corn semolina is most often called cornmeal.
  • Semolina is simply coarser ground flour. It can be used on its own in recipes and is also commonly used as dusting.
  • So when you are ready to take your bread making and pizza dough to the next level, grab some organic semolina to prevent your dough from sticking. Since semolina does not absorb water like flour does a little goes farther.

 

What is "La Milanaise"?

  • Founded in 1977 in Milan, Quebec (Eastern Townships) by Robert and Lily Beauchemin it began as an organic farming venture. In 1982 they started expanding their stone-milled organic flour products by building their first dedicated milling building on the farm and never stopped expanding.
  • With their latest factory built in 2016 in St-Jean-sur-Richelieu, Quebec (Montérégie) "La Milanaise" now has a 350 ton per day capacity, becoming the biggest organic milling company in the province.
