Our organic whole einkorn flour is made by ''La Milanaise'' in Quebec from organic whole einkorn. It has a low gluten content, but is nevertheless suitable for making bread. It should be cut with wheat flour so as to obtain a better yield. It has a hazelnut-like flavor that is more distinct than that of wheat flour.
Whole einkorn flour is made from whole grain einkorn and thus retains the nutrients found in whole grains. Whole grains have the 3 parts of the grain; The bran, endosperm and germ.
